Smoked Cheese Vegetarian Solyanka Spicy Soup Recipes

We offer you to cook a vegetarian hodgepodge. What is, in general, a hodgepodge, or, as this dish was called before, a villager. This is a thick spicy soup, something in between the first and second courses.

The taste of the hodgepodge is sour, salty, spicy, and consists of its main components: pickled or pickled cucumbers, as an option, it can be mushrooms or sauerkraut, olives, capers, lemon.

Traditional hodgepodge abounds with spices, most often it is dill, parsley, onion, garlic. The option that we offer you to cook, in my opinion, is in no way inferior to a traditional hodgepodge but has a lot of advantages compared to it.

  • It is definitely less fat!
  • It does not contain tamasic foods!
  • Nevertheless, it will delight us with a familiar taste!

So, we proceed to the preparation of the vegetarian pickled hodgepodge.

We will need the following products for the preparation of Vegetarian hodgepodge:

  • 200 g smoked Adyghe cheese;
  • 3-4 potatoes;
  • 1-2 carrots;
  • 2 stalks of celery;
  • 200-300 g. Cauliflower;
  • 1 large tomato;
  • pickled or pickled cucumbers;
  • 2 l water;
  • 2 tbsp. l ghee;
  • 0.5 tsp mustard seeds;
  • 0.5 tsp ground fenugreek;
  • 1 tsp smoked paprika;
  • 1 tsp sea ​​salt;
  • greens, lemon, olives.

We start to cook vegetarian hodgepodge. We cut all the products into cubes, put the water. This, by the way, maybe a vegetable broth, just the day before it cooked potatoes for stuffing dumplings, so it was picked up on soup. First, we throw chopped potatoes into hot water and, after a few minutes, cauliflower.

We heat ghee in a pan and throw mustard seeds into the warmed oil. As she begins to shoot, add carrots, fry for a couple of minutes, then put chopped cucumbers there – two more minutes, then celery and tomato, a little more. Finally, fry it all with fenugreek and paprika.

We send the contents of the pan to the pan, where our potatoes and cabbage are almost ready. Mix and add olives, cheese, herbs, salt. Two more minutes on fire, and leave to insist for at least half an hour. Our Vegetarian hodgepodge is ready. This is just one of its options. Of course, you can experiment on this basis.

You can take beans instead of potatoes, you can add mushrooms or sauerkraut, and if you like, then vegetarian sausages, then it is a hodgepodge.
